Can you imagine a restaurant designed for people with T1D? Jackson can. He loves going out to eat but is sometimes frustrated that restaurants don’t always post nutritional information. Someday, he wants to open “Jackson’s Restaurant of Everything,” complete with nutritionists to answer questions. In the meantime, Jackson plays soccer, enjoys performing (he once played Chip in Beauty and the Beast), and spreads awareness about T1D, such as by speaking about his experience at a Friends of Rotary meeting. “I know there are people all over the world trying really hard to find things to help kids like me live easier with T1D,” says Jackson. “I am going to go to college and find a cure for T1D so nobody has to have it anymore. That would make me super–duper happy!”
